How to brew both

Weigh the leaf if you can. If you cannot: a heaped teaspoon per cup, and take the kettle off before it roars.

Cold nights make slow leaf, and slow leaf is sweeter

At 2,100 metres the bush grows about a third as fast as it would in the lowlands. Less growth means more amino acid in the bud and less of the tannin that turns a cup bitter when your water is too hot.

It also means the flush is small, late and impossible to schedule. In 2026 it came ten days behind, which is why the tin says lot 04 and not April.
